Cempedak muffin

Finally… Finally I bought a big piece of cempedak and pureed the flesh of the seeds to bake as muffins.

Since last year I have been wanting to do so but somehow never did managed to do it until yesterday!

Simply love the aroma and taste of the muffin though as usual my eldest did not like such strong smell and taste of such fruits. Thanks to the recipe book written by Chef Siti Mastura.  I bought the book during the fasting month and Chef Siti had kindly even autographed the book …. am soooo happy! 🙂

The recipe :

Cempedak Muffin 

Ingredient A :

250 gm butter
180 gm castor sugar
2 eggs
1 tsp vanilla essence

Ingredient B  : 

250 gm cake flour (or Top flour)
1 tsp baking powder
1/2 tsp bicarbonate soda
1/4 tsp salt

Ingredient C :

100 ml evaporated milk
120 ml fresh milk
200 gm cempedak puree
50 gm diced almond

Ingredient D : 

100 gm cempedak puree
50 gm diced almond

Method : 

– Beat butter and sugar till light. Add in eggs and vanilla essence.

– Add in ingredient B and C and mix well.

– Pour batter in muffin tray filled with paper casings and then place some of the cempedak puree (Ingredient D) on top of the muffins. Sprinkle some of the diced almonds.

– Bake at 180 degree Celsius for about 25-30 mins.
