Banana Muffin with Sunflower Seeds

This recipe came from one of my cookbooks and it is a recipe by Chef Mastura. The ingredients are simple but with a twist, using yoghurt and sunflower seeds, thus to me it’s like a more healthier version. More important it taste soo good 🙂

Banana Muffin with Nuts

Ingredients A:
60 g butter or margarine (I prefer butter)
90 g castor sugar
1 egg

Ingredients B:
120 g self raising flour
1/2 tsp salt
1/2 tsp bicarbonate soda

Ingredients C:
1 tsp banana essence
2 tbsp yoghurt (plain)
350 g bananas, mashed (about 5 bananas)
40 g chopped cashew nuts
20 g sunflower seeds

Method:
Beat all ingredients A till soft and smooth.
Add in sifted ingredients B.
Finally, add in ingredients C.
Mix well.
Spoon batter into muffin cups. Bake at 170 degree C, for 25 mins or till done.

Note : Can sprinkle some of the sunflowers as toppings. .
