Banana Muffin with Sunflower Seeds

This recipe came from one of my cookbooks and it is a recipe by Chef Mastura. The ingredients are simple but with a twist, using yoghurt and sunflower seeds, thus to me it’s like a more healthier version. More important it taste soo good šŸ™‚

Banana Muffin with Nuts

Ingredients A:
60 g butter or margarine (I prefer butter)
90 g castor sugar
1 egg

Ingredients B:
120 g self raising flour
1/2 tsp salt
1/2 tsp bicarbonate soda

Ingredients C:
1 tsp banana essence
2 tbsp yoghurt (plain)
350 g bananas, mashed (about 5 bananas)
40 g chopped cashew nuts
20 g sunflower seeds

Method:
Beat all ingredients A till soft and smooth.
Add in sifted ingredients B.
Finally, add in ingredients C.
Mix well.
Spoon batter into muffin cups. Bake at 170 degree C, for 25 mins or till done.

Note : Can sprinkle some of the sunflowers as toppings. .

Banana Marble Cake

Just bakedĀ this Banana Marble Cake for tomorrow’s Eid celebrationĀ cum family bbq event.. Thanks to R.Y. for sharing this recipe from Chef Zubaidah.Ā Alhamdulillah, it turned out well and the family members love it! šŸ™‚


Banana Marble Cake

Ingredients
250g Ripe bananas, mashed
250g Cake flour
1 tsp Baking powder
200g Granulated sugar
90ml Oil
2 tbsp Condensed milk
50ml Fresh milk/evaporated milk
1 tbsp Ovalette
2 tbsp Chocolate emulco
6 Eggs
Ā 
Instructions

Mix all ingredients except oil, mashed bananas and chocolate emulco. Beat these ingredients till thick and fluffy at high speed.
Add mashed bananas and continue to beat until its thoroughly incorporated.
Next, add the oil and this time beat with a slow speed for about 2-3 mins.
Divide batter into 2 equal portions. One portion, add the chocolate emulco.
Add the plain batter and the chocolate batter alternately on the baking pan which has already been greased.Ā Repeat until batter finished.
Bake for 1 hour. to 170Ā°C. Ā Let it cool before removing from cake pan.

Instead of making it marble-like, I chose to have it zebra-like …. the cake before going into the oven.

Banana and Choc Chips Muffins

Another of my kids favourite šŸ™‚

Somehow the combination of banana and choc chips are always a favourite with the young and old … truly a made in heaven food galore combination … yum yum!!!

Banana and Choc Chips muffins

Ā 

Ingredients :

1 3/4 cup of plain flour (sieve)

3/4 cup sugar

1 tsp baking powder

1 tsp baking soda

1/2 tsp salt

1 egg

1/2 cup olive oil (or vegetable oil)

1/2 cup milk

1 tsp vanilla essence

1 cup mashed bananas

3/4 cup chocolate chips

Method :

– In a large bowl, combine the flour, sugar, baking powder, baking soda and salt.

– In another bowl, combine the egg, oil, milk and vanilla.Ā  Whisk thoroughly.

– Add the wet mixture to the dry ingredients till moistened. Use the whisk to do so.

– Add in the bananas and chocolate chips.Ā  Mix thoroughly.

– Fill the muffin cups with 3/4 of the mixture.

– Bake at 180 degree celsius for 20 min or till cook (use a toothpick to insert into the muffin and if it comes out clean then itā€™s already cook)

– Cool and ready to serve.
