Baked Penne ala Busu

With the young guests coming over to the house last Sunday, I decided to cook baked pasta and I chose the pasta “penne” instead of the usual “elbow”.

Alhamdulillah, everyone seems to enjoy the baked penne and the young guests even requested for a second helping 🙂

Baked Penne ala Busu

Then yesterday night, my daughter told me that her all friends had requested for the recipe. So I decided to type it out here so that they can refer anytime they like.

1 pkt of minced beef
4 garlic – chopped finely
2 big red onion – diced
2 stalks of coriander leaves – chopped finely
5-6 chili padi (bird’s eye chili) – cut into small pieces, more if you like it spicier
1 tbsp of mixed spiced powder
1 1/2 tbsp of sugar
salt to taste
.water
about 2-3 dash of black pepper powder (optional)

Part of the ingredients

1 green capsicum – diced, put into 1 container
1 yellow capsicum – diced, put into 1 container
4 pieces of chicken sausages – sliced, put into 1 container
enough cherry tomatoes – cut into two, put into 1 container
1 pkt of mozzarella cheese

Method:
To make the sauce

In a medium size pot, heat up and add a bit of oil to fry the garlic and onion.

Once the garlic and onion has soften (about 3-5 mins of frying), add the spaghetti sauce and Tostitos sauce.

Add about 1-2 cup of water or more depending on how thick you want the sauce to be. Stir and then add the minced meat. Let it simmer for about 5 mins.

Then add in the chilies and coriander leaves, the mixed spiced, sugar and salt to taste. If you like to add the black pepper powder, you may do so as well. Stir well.

Last, add in the sausages and let the sauce simmer for another 10 mins before you off the fire. .

To bake the pasta

Have a baking tin or bakingware ready. Spray a bit of olive oil (optional), add the pasta, the capsicums and the sauce. Mix well.

On top add the cherry tomatoes and then sprinkle the cheese. Bake in the oven for about 10-12 mins at 180 degree celsius.

Serve hot and enjoy! 🙂

Spicy fried macaroni with spaghetti sauce

Our dinner last night was a quick n easy dish …simply called Spicy Fried Macaroni which I fried using some spaghetti sauce. I love it! It’s taste way better than the traditional Malay method of frying the macaroni.

It’s simple to cook really … all you need is about 5-6 spoonful of ground chili paste (blend the already soaked 10 pcs of dried chillies with 2 onions), fry over a small fire till fragrant, then add minced beef, 4-5 spoonful of spaghetti sauce, 2-3 spoonful of tomato sauce, 2-3 spoonful of oyster sauce, enough salt to taste and mix well till minced beef are cooked.

Then add other ingredients (optional) like prawns or sliced fishcakes or even mix vegetables. Stir well for a few minutes and then add the already boiled macaroni. Mix well and voila! Ready to serve and eat 🙂

Aglio Olio – garlic n oil pasta

20120830-163730.jpg

Home-cooked Aglio Olio by my colleague’s husband. Very tasty and the garlic taste is light and fragrant to the palate. I like it a lot 🙂

Can add prawns or chicken to it and make it spicy too.

Here’s the recipe :

Ingredients :

– 2 servings of pasta
– 3 tbsp olive oil
– 40g butter, divided
– 10 to 12 prawns
– 10 cloves garlic, peeled and chopped
– 2 chilli padi, sliced or 1/2 tsp dried chilli flakes
– 30g Iparsley, finely chopped
– salt and freshly cracked black pepper

Directions :

1. Bring a pot of water with 1 tbsp sea salt to a boil. Cook pasta according to the timing indicated on the packet, until al dente. Drain and set aside the pasta, reserving some of the pasta water.

2. Remove the shells and veins from the prawns. Add the prawns heads and shells to a small pot with just enough water to cover them (about 150ml water), bring to a simmer for about 3-5 minutes to make prawn stock. Strain the stock and set aside.

3. Heat half the butter in a sauce pan. Cook the prawns on both sides and set aside.

4. Add olive oil to the sauce pan with the prawn juices. When the oil is heated, add garlic and chilli padi/chilli flakes (if using). Saute till the garlic turns light brown.

5. Turn off the stove. Add cooked pasta, cooked prawns, about 2 tbsp of prawn stock, chopped parsley and remaining butter (cubed) to the garlic & oil mixture. Stir to coat all the ingredients evenly. Season with salt and freshly cracked black pepper.
